If you know me, you know I LOVE Buddha's!!
I also love Buddha bowls – this was a super simple one that I made for a lunch the other day.
Buddha Bowl
Cooked Brown Rice (can use other grains such as millet, quinoa etc.)
Steamed Veggies ( I used zucchini, snap peas, broccoli)
Chopped Almonds
Dressing
2 TBSP tahini
Juice of 1 lemon (2 TBSP)
1 tsp miso
Sprinkle of sugar or agave (to taste)
A bit of warm water about 3 TBSP
Shake all ingredients together until mixed together – pour over Buddha bowl!
Enjoy!
Make sure to update your 30 miles in 30 days walking totals! I’m going to do a blog post about it on Sunday with everyone’s totals!
Up tomorrow – an awesome guest post about how much calcium we need and how to get it!
Love the idea of a buddha bowl! Your dressing sounds great :)
ReplyDeleteI always eat hummus, but I've never tried Tahini plain...It's awesome that you thought to put it in a dressing! So creative :D
ReplyDeleteYum, the whole Buddha Bowl sounds really good too! Nuts and veggies are some of my favs :)
Mmmm, your bowls always look so fresh and healthy. Perfect summer meal.
