Healthy Rhubarb, Apple, Strawberry Crisp!

So my good friend and I went to the market over the weekend ( I LOVE the market!) and I picked up a bunch of rhubarb!  I put a shot out on my facebook page for rhubarb ideas as well as scoured the internet for ideas!

I settled on 2 different things Rhubarb, Apple and Strawberry Crip and a Rhubarb, Apple and Strawberry chutney!

When I googled recipes for Crisps I was shocked at all the butter, sugar and oil etc.… I decided I needed to do a makeover.

To save time I cooked all the rhubarb (8 stalks) and apples (2)together, along with 1/3 cup sugar and a weeeeee bit of cinnamon (1/4 tsp).

I put about 1.5 cup of the apple/rhubarb mixture in a bread pan.  Then I covered it with about 6 fresh strawberries sliced up!!

For the “crumble part” I used 1 cup of oats, 1/3 cup flour and 1/3 cup brown sugar.  1 tsp vanilla, 1 tbsp oil, 1 tbsp chia seed and some of the liquid from the apple rhubarb mixture.

Placed it on top of the fruit  and baked at 350 for about 45 mins!

Mmmmm… it was drool worthy!

Especially with some vanilla soy ice cream

  5. Looks amazing! I hated rhubarb when I was a kid, but now I love it---my mom makes the best rhubarb pie, but this looks even better :)

  7. This is so sweet and perfect and lovely! I've never cooked with rhubarb...not even sure if I've eaten it before. But I always love the look of it, especially the bright pink color it gives everything. Just beautiful!

  9. Can't go wrong with crisps/crumbles! I made one last year with 2 tbsp or coconut oil to make it more 'crisp' like and it was seriously incredible!
