My Fabulous friend Tasha, always sends me yummy recipes to test out (and put my spin on).
She tried this one and said it was just ok… so I played around a bit and made it tasty.
It’s perfect for simmering away on a Sunday!
Original recipe in white – additions in PINK!
Shiitake Mushroom & Kale Soup
6 cups water
1 onion, sliced
6 oz shiitake mushrooms, stems removed & reserved, caps sliced (I used dried and included the water I used for soaking for extra flavour!)
1 carrot, peeled & chopped
1 Tbsp herbs such as sage, rosemary, or thyme (omitted)
3 cups chopped hearty greens (kale, collard greens, or turnip greens)
1/2 head green cabbage shredded
a few pieces cauliflower
1/4 tsp salt (I used 1/4 “chicken flavored” bullion cube instead)
(1 package of instant miso added after boiling – this miso included dried tofu)
1 Tbsp seaweed (I’m not sure the kind though!)
In a medium pot, combine water, onion, shiitake, cauliflower, carrot and bullion cube. Bring to a boil and reduce to a simmer. Simmer for 20 mins, remove mushrooms and slice, add back in. Add cabbage, herbs, and greens to the broth and bring to a boil. Reduce the heat to simmer for 5 mins. Add miso and serve steaming!
