Lettuce Wraps

Thank you to everyone who took my survey on facebook!  I’m glad to know what my FABULOUS readers are looking for!!    I am so excited to plaster this place with recipes!!!

Here is one for you that is super versatile and way to easy!

Lettuce Wraps

4x pieces of lettuce per person (or more if hungry)

1 tsp sesame oil

Chicken, Tofu or whatever you would like to use  - I used 1 chicken breast

Veggies of choice – I used mushrooms, zucchini, bean sprouts and red peppers

Soy Sauce + Sweet Chilli Sauce

Sauté chicken or tofu in sesame oil

Once cooked, add in veggies (minus bean sprouts)

Cook up until at desired crunchiness level (I don’t like over cooked veggies)

Add about 1/2 tsp soy sauce and sweet chilli sauce to taste!

Wash and dry lettuce leaves

Stuff lettuce leaves with mixture and top with bean sprouts!

Now to eat (the tricky part) fold the stem of the lettuce leaf over the mixture, and tuck in the rest of it, so it covers all the mixture… then CRUNCH AWAY!  

Have a napkin handy though, this baby is drippy!

Awesome for lunch, just pack the lettuce separately!

Well I’m off to finish off a bunch of projects – 2 weeks left, SO hard to believe!  It’s getting SO hard to spend the day inside writing, reading and studying as the SUN IS SHINING, and it’s warm!

So off I go with my fresh JUICE!

(1/2 beet, 1 cucumber, 1/4ish cup green cabbage, 1/2 red pepper, 1 lime, 1 carrot, 1 apple + 2 mini oranges) –

Yup, sounds weird, but actually it’s a bit flavourless…  how weird is that?

  1. I have some beets to juice, and I am excited!! I have never juiced beets before, so I don't know what they would be good with ...

  2. Your photos are so great, they really capture the beauty of the food. Hmmmm, I have never thought to juice cabbage but I bet it's super healthy since it's part of the cruciferous family I believe. My exciting weekend plans are making healthy cupcakes for a friend's birthday and hopefully spending some quality time with my hubby. :)

    I love lettuce wraps - these look good! that's crazy that the juice had little flavor?? it looks like it would be great!

    we are going to a new vegan restaurant that just opened - can't wait !!

  4. Oh I've been so busy lately that I feel like I'm terribly behind on your blog, Jess!!!

    Boo for that!!!

    Anywho - I have yet to bring myself to juice with beets. Their ability to stain completely intimidates me.

    I'm drinking a juice as I write - one lemon, one whole large cucumber, a good chunk of ginger, one apple, and spinach. Very fresh and lovely!

    The lettuce wraps look amazing. I need to make those more often--they're so good, and when I crunch on lettuce I'm just as happy as with carby stuff :)
