Avocado Pudding

Would you believe me if I told you avocado pudding rocks my PMSing socks?!

We made a recipe similar to this (no chocolate though) at my raw foods course!

And I thought it was purely gorgeous, smooth and luxurious!

CHOCOLATE AVOCADO PUDDING

makes 2 smallish servings, or 1 large yummy one!!

1 ripe avocado

1 ripe banana (the riper the better)

1/2 tsp vanilla

1 tsp lemon juice

1/2 – 1 TBSP raw cacao powder

Sweetener to taste (dates, agave, honey, maple syrup, stevia)  I used maple syrup about 2 tsp.

Blend all ingredients together in the food processor until smooth

You’ll have to scrap down the sides of the food processor occasionally!

Super yummy for dipping (think fondue!!)  or for just dipping your fingers in!

Enjoy!

  4. Anything that's vegan and has the word pudding attached to it gets my approval. Thank goodness for avocado pudding. Yum.

  6. This sounds SOOO YUM! I'm going to have to make note of it, as I've only really seen dairy free tofu puddings.

(I'm also dairy free, by the way. I'm new to wordpress, but I've been following your blog for months!)
