The sun is shining… it’s a beautiful day!

I feel so lucky, this is day 4 of sunshine!!  I love it!!

Lots on the plate for you guys today!

I bombed…  I never bomb…  I usually get about a 6+/10 mark on my meals…  this one I believe didn’t even measure on the scale…

Sweet and sour chicken and stir fried rice.   I was so excited, it looked so good!

The brown basmati rice was full of veggies (and a serving on mushrooms, for me only) spices and sauces!  It was alright but nothing special.

I had big hopes for dinner last night, but we ended up going out for wings and I had a shrimp cocktail with salad.  It was pretty fantastic, I’m not going to lie!

So good, and just what was needed!  I used to drink “green tea lattes” all the time at Starbucks – but now just make them at home!  Matcha is great in smoothies too!!

Ok… part 2 for my ASK ME A QUESTION, keep them coming!

I miss macaroni & cheese--any way to simulate the creamy cheesiness but remain dairy free?

I haven’t experimented at all with this, as it wasn’t one of the things I ate before.   I know there are TONS of recipes out there for cheesy substitutes, mostly using nutritional yeast.

I actually read about one today for hummus + nutritional yeast + tumeric = cheesy goodness!

If you could compete in any Olympic sport, what would you choose?

Ugg… if I had NO FEAR – probably snowboarding or gymnastics! I used to be a gymnastics coach, but I can’t even do a cartwheel?   But I loved watching the kids do their thang’

Ps. I coached babies and preschoolers, so no cart wheeling was necessary!

Any big ideas for your wedding so far? What do you think will be the best part about your wedding... besides the GETTING MARRIED part!

Yes, lots of big ideas for the wedding.  It will be on a beach in Mexico (probably Mazatlan) only really close family and friends.  Pretty casual, filled with lots of love!

The thing I am the most excited about?  (prepare for mush) I honestly didn’t think I would ever meet someone that I would be so in love with!  I have always been “the single girl”, but from our very first date we just click.  We are pretty opposite, but I think that makes us work so well!!  So the thing I am most excited about is knowing that we are both committing to working hard at making our marriage work and of course spending a whole week surrounded by most of our favourite people!

  1. It's such a disappointment when you plan out a whole meal and it fails on you! But shrimp cocktail totally can heal the pain...

    Destination: Mexico wedding! Amazing! You will have an unforgettable time, for certain!

    Also I think I asked the Olympics questions - my default answer would be figure skating but snowboarding looks so cool too. It must have been fun being a preschooler gymnastics coach! They're such a fun age (usually..til the tears start).

    I have never thought of adding my almond milk to matcha powder....great idea! It would give the thickness that the lattes have. I love the starbucks matcha until they told me it is loaded with sugar.....what the heck?! LOL

  6. sounds like a wonderful wedding...not that you probably don't have a ton of advice, but if i could go back i'd do a destination wedding and spend the $$ on the honeymoon/getting back. i bet your day is going to be wonderful!

  13. I found this recipe on the "Love Veggies and Yoga" blog. I can't eat dairy/gluten/wheat so this worked perfectly! I followed the recipe exactly and it was a nice treat. Next time I'll try it over quinoa or rice pasta...YUM!

  14. I found this recipe on the "Love Veggies and Yoga" blog. It is a great recipe for those of us who can't eat dairy/wheat/gluten but still want to enjoy "mac & cheese". I followed the recipe exactly and it turned out great. Next time I'd make the cheesy sauce and pour it over quinoa or rice pasta!
