Easy Chilli and food filled FUN!

Ok, since I haven’t been so fabulous at posting food stuff lately,
I have a whole bunch for you today!

I have been loving my grater thingy-mabob
DSC_0757
I have been using it to make zucchini noodles every time we have pasta (for myself) I honestly don’t notice a difference, from regular noodles!!

And it makes the dish more colorful!! DSC_0763

I highly recommend getting one of these, I found mine on ebay!
with shipping it was around $15 – I saw them all over Calgary this weekend though, so if you live anywhere near a great kitchen store you can find one!

I’ve also used it for shredding carrots for a salad (sorry no pics)

A few weeks ago (yes that’s how far behind I am) some of our friends hosted an “Indian Food” night.. I made red curry! DSC_0771
Here is the link  (ssshhh don’t tell anyone it’s red THAI curry)

If you haven’t had a chance to try this recipe out yet, I highly recommend it! It’s one of my favourites!
And it’s really easy if you are a curry virgin!  (freezes well too!)

Don’t forget to sprinkle some fresh cilantro on top though, makes it much prettier!

I also tested out Ohsheglows 3 Min Oatmeal Carrot Cake
DSC_0791
It made 3 batches just like this – jam packed full of carrots!

I slathered it with almond butter, chia seeds and crasins!DSC_0792
This lady knows how to cook!  This was delish – you couldn’t even notice the carrots in it!!
DSC_0793
The best part – I still have 2 bowls of it left in the fridge to make all fancy!  Just wake up, pop it in the microwave for 3 mins and presto – done!

Food is soooooo fun!!

While I was in Calgary – I made Layne a big old pot of chilli!
Which this morning I found out is already completely consumed - apparently I must cook more food next visit!

I couldn’t resist making up a big pot when I got home!
It’s rainy and icky outside, so what’s better than a big steamy pot of homemade chilli?

So super easy too!  Into the pot went;
Ground bison, 1 can rinsed kidney beans, 1 onion, 2 cloves of garlic, tomatoe sauce, 1 whole zucchini and a package of this stuff – which is fantastic by the way – and the same price as the el paso brand which is loaded full of crap!

Well that’s all from me!
I hope you enjoyed this episode of
Dairy Free Betty! – ahhahaa…

and I hope I inspire you to create yumminess in your kitchen
I know that I am always inspired by all of YOU!!

PS – SIDE NOTE – word on the street is I am doing a guest post on one of my FAVORITE blogs
SOOO excited, I shall keep you posted on the details!

PSSSSSSSST – One last thing, I am currently conjuring up ideas for my next give away so if you have any suggestions bring em on!

Peace out – haha
Jessica

Ok.. one last "wedding" side note - I am having NO luck finding a reasonable wedding location down south. Right now the best I can find is around $10,000 for around 40ish people - that my friends is soo much money for this girl.  Especially when the idea is casual wedding on the beach, reception with music only for the first dances, then off to a night club to dance the night away.   Oh and a great photographer!?

Any suggestions?  Am I searching in the wrong places?

  2. I saw one of those grater thingys in a cooking supply store but was skeptical about how well it would work. And what I really wanted was a spiralizer. I think I should go back and get the grater!

  13. I'm going to have to get one of those grater thing ama jiggies! And that carrot cake looks delish too. Weddings are sooo darn pricey!! We can't really afford it now while going to school along with a new house, so we are waiting a bit. I'm not too familiar with the south, hope you find one!

  14. Planning a wedding is SOOOO pricey! I won't even go there. All I can say is I would've spent WAY less had I to do it all over again. HOWEVER, it was perfect. My 2 YEARS of planning paid off, it was beautiful!

I want one of those grater thingies! Yours is the second one I've seen today and I'm so jealous!
